CREMA IN VERDE

Avete presente  quando  nell’incertezza di come andrà la settimana comprate dell’insalata in busta- per- ogni- evenienza e non la mangiate subito? Un attimo di distrazione e vi guarda triste e già quasi vizza. Poiché personalmente detesto buttare via il cibo, un modo per riciclare l’insalata prima che sia troppo tardi è una crema di verdura. Semplice, leggera e perfetta per le prime serate fredde d’autunno.


INGREDIENTI
- olio evo
- misto per soffritto (sedano, carota, cipolla tagliate a cubetti)
- mezza cipolla rossa
- 1 patata grande a testa
- 1 zucchina a testa
- 150 g di insalatina
- sale
- mezzo cucchiaino di curry
- ½ cubetto di dado di verdure
- mandorle tagliate a lamelle
- 200g di panna o yogurt (facoltativo)


1)Preparate la pentola a pressione sul fuoco. Pulite e tagliate le patate e le zucchine a tocchetti. Fate soffriggere le verdure in un filo d’olio, aggiungendo il curry e lasciando che sprigioni il suo aroma.

2) Mettete le verdure nella pentola le verdure, compresa l’insalata, e schiacciate delicatamente le foglie sul fondo. Aggiungete ½ litro d’acqua (se volete una minestra un po’ più liquida mettetene  ¾ di litro), il mezzo dado, e chiudete il coperchio.  Alzate il fuoco e al primo sibilo forte, abbassate la fiamma. Calcolate 8 minuti.

3) Lasciate sfiatare la pentola, aprite il coperchio. Con il minipimer, rendete la zuppa una crema. Regolate di sale e eventualmente aggiungete la panna o lo yogurt. Servite nei piatti individuali, cospargendoli con le scaglie di mandorla.

4) Se non avete la pentola a pressione, mettete il soffritto e fate bollire il brodo di verdure (utilizzando 1l di acqua). Aggiungete le verdure tagliate a tocchetti e fate sobbollire per circa 30 minuti.





GREEN VEGETABLE CREAM
Do you know when  when in the uncertainty of the week you buy the salad in a bag (for-every-need), and you don't eat right away? A moment of inattention and you the salad looks sad and almost withered. Because personally I hate throwing food away, a way to recycle the salad before it is too late is a cream of vegetable. Simple, light and perfect for the first cold nights of autumn. 

INGREDIENTS
- extra virgin oil
- a punch of mixed vegetables (celery, carrot, onion, cut into little cubes)  
- 1/2 red onion
- 1 large potato per person
- 1 courgette per person
- 150 g of salad
- salt
- 1/2 teaspoon of curry powder
- ½  bouillon cube
- flaked almonds  
- 200g of cream or yogurt (optional)
 
1) Prepare the pressure cooker on the stove. Clean and slice the potatoes and zucchini into pieces. Fry the punch of vegetables in a little oil (this is "soffritto"), add the curry powder, and let it gives off its aroma.
2) Place the vegetables in the pot , including salad and gently crush the leaves on the bottom. Add ½ liter of water (if you want a more liquid soup, put ¾ of a liter), the 1/2 bouillon cube, and close the lid. Raise the heat and at the first whistle loud, lower the heat. Calculate 8 minutes.
3) Leave the pot vent, and open the lid. With the blender, make a cream soup. Season with salt and if u want,  add the cream or yogurt. Serve in individual plates, sprinkle with flaked almonds.
4) If you do not have a pressure cooker, put the sauce and boil the vegetable stock (using 1 liter of water). Add the vegetables cut into chunks and simmer for about 30 minutes.
