FUSI DI POLLO ALLA MEDITERRANEA

Adoro il pollo. Versatile, nutriente e poco costoso, è presente in tutte le cucine del mondo, quindi offre sempre mille idee. Ieri ho scelto i fusi, con una ricetta salva-cena che potesse essere preparata in anticipo.
Occhio che nella mia versione serve la pentola a pressione, e qui apro una parentesi. Oltre che dal classico menage-a-trois di padella/wok – forno tradizionale -  microonde, io sono dipendente dalla pentola a pressione. Tanti pensano che vada bene solo per minestre e minestroni, e invece è la migliore amica quando avete poco tempo, per tantissimi piatti. Per imparare i rudimenti, basta uno dei tanti libri in commercio (anche se ce n'è uno in particolare che adoro), poi è tutta fantasia, potete adattare tantissime ricette alla sua magia – che consiste nel fatto che 1 suo minuto di cottura corrisponde a 3-4 minuti in pentola normale. Pratico no?




INGREDIENTI
Ingredienti per la marinata:
- ½ cucchiaino di curcuma
- ½  cucchiaino di coriandolo
- ½ cucchiaino di cumino
- ½ cucchiaino di paprika forte
- il succo di ½ limone
- sale
- pepe nero
- olio evo

Ingredienti successivi:
- olio evo
- ½ cipolla rossa tagliata ad anelli sottili
- farina
- 1 kg di fusi di pollo
- 1 barattolo di pomodorini ciliegina
- 12 olive verdi
- ½ cubetto di dado alle verdure


1) In una larga ciotola, ponete a marinare i fusi di pollo con gli ingredienti della marinata. Coprite e lasciate il tutto in frigo per almeno 2 ore (quindi potete farlo a pranzo, o già la mattina prima di uscire).

2) Preparate una padella e la pentola a pressione. Nella padella fate soffriggere la cipolla ad anelli con dell’olio, lasciandola ammorbidire a fuoco basso. Mettete della farina in un piatto fondo.

3) Infarinate i fusi , scuotendoli per eliminare la farina in eccesso, e fateli rosolare pochi per volta nella padella. Trasferiteli nella pentola a pressione con l’olio rimasto e la cipolla. Accendete il fuoco sotto la pentola, aggiungete i pomodorini e le olive, e poca acqua giusto per coprire il fondo (1cm), dato che poi i pomodorini rilasceranno la propria acqua durante la cottura. Completate con il cubetto di dado, e chiudete la pentola.

4) Alzate il fuoco, e quando la pentola fa il primo sibilo forte, abbassate la fiamma al minimo e contate 7-8 minuti. Lasciate sfiatare la pentola, apritela e servite il pollo. Se il sugo fosse troppo liquido, lasciatelo sul fuoco a restringere, oppure aggiungere un cucchiaio di fecola di patate e mescolate. Mettete il sugo e le olive sui fusi.

5) Se non avete la pentola a pressione, il tutto (rosolatura e cottura) può essere fatto in padella, lasciando sobbollire. Calcolate circa 25-30 minuti di cottura. Io ho servito questo piatto con dell’hummus preparato durante la cottura del pollo e del pane egiziano scaldato al momento.



MEDITERRANEAN CHICKEN DRUMSTICKS
I love the chicken. It's versatile, nutritious and inexpensive. You can find it in all the cuisine of the world, and always it offers thousands of ideas. Yesterday I choose the drumsticks, saving dinner with a recipe that could be prepared in advance. My version uses the pressure cooker, and I open a parenthesis here. Apart from the classic menage-a-trois of the pan / wok - oven - microwave, I am dependent on the pressure cooker. Many people think that it's useful only for soups and stews, but in fact it's the solution when you have few time, for many dishes. To learn the basics, pick  just one of many books on the market, then it's all fantasy. You can adapt many recipes to his magic - which is that:  1 minute of cooking inside matches 3 - 4 minutes in a regular pot. Convenient, isn't?


INGREDIENTS
Ingredients Ingredients for the marinade:
- ½ tsp Turmeric 
- ½ teaspoon coriander 
- ½ tsp cumin 
- ½ teaspoon of paprika strong 
- the juice of ½ lemon 
- salt 
- black pepper 
- extra virgin oil

Subsequent Ingredients: 
-extra virgin oil
- ½ red onion sliced ​in thin ring 
- flour 
- 1 kg chicken drumsticks 
- 1 can of cherry tomatoes 
- 12 green olives 
- ½ cube of vegetable broth nut

1) In a large bowl, place the  chicken drumsticks with the marinade ingredients. Cover and lput in the fridge for at least 2 hours (so you can do it at lunch, or already in the morning before going out).
2) Prepare a frying pan and the pressure cooker. In the pan, fry the onion rings with a bit of oil, letting the onion soften over low heat. Put the flour in a dish.
3) Flour the drumsticks, shaking them to remove excess flour, and brown them in the pan a few at a time. Transfer them in the pressure cooker with the  oil and onion remaining in the pan. Turn the heat under the pot, add the tomatoes and the olives, and a little water just to cover the bottom (1 cm), since then the tomatoes will release their water during cooking. Complete with the vegetable broth nut, and close the pot.
 
4) Raise the fire, and when the pot does the first loud hiss, lower the heat to low and count 7-8 minutes. Let the pot vent, open it and serve the chicken. If the sauce is too liquid, let it on the fire to restrict or add a tablespoon of potato starch and stir. Put the sauce and olives on time.
 
 5) If you do not have a pressure cooker, all (browning and cooking) can be done in the pan, let it simmer. Allow about 25-30 minutes of cooking. I served this dish with hummus prepared during the cooking of chicken and bread warmed Egypt at the time.
