GNOCCHI GORGONZOLA E SPECK

“Pronto mamma, scusa il disturbo.. quanta farina ci vuole per fare gli gnocchi? Non mi ricordo mai..”.
Risposta (tipica di chi cucina molto e bene da una vita): “Eh, quanto basta. Non l’ho mai pesata, vado sempre a occhio”. Ah già, ecco perché non mi ricordo mai quanta farina ci va e ogni volta questa telefonata si ripete. Mi sto applicando sugli gnocchi, perché mi piacciono davvero tanto, e fanno così Casa e Domenica.. Certo questo non è un piatto light, ma se non si esagera con la quantità di formaggio, è un buon piatto unico senza esagerazioni. Proverò a  dare delle dosi di farina dopo aver pesato il mio “a occhio”, anche se in effetti si valuta il composto guardandolo in faccia e toccandolo. Naturalmente molto fa il tipo di patata utilizzato, che deve essere possibilmente farinosa. 



INGREDIENTI
- 2 patate medie a testa (circa 1,2 kg in totale)
- 300g di farina  più quella per la lavorazione
- 1 uovo
- 1 pizzico di sale
- olio evo
- 1 confezione di gorgonzola (dolce o piccante a seconda dei gusti)
- 100g di speck in una sola fetta
- poco latte

1) Mettete le patate nel cestello della pentola a pressione e coprite il fondo con un bicchiere di acqua fredda. Chiudete il coperchio, accendete il fuoco al massimo, e al primo sibilo riducetelo al minimo e calcolate 12 minuti. Lasciate sfiatare la pentola, aprite il coperchio.

2) Se non avete la pentola a pressione, mettete le patate in una grande pentola in acqua fredda, e lessatele per circa 40 minuti.

3) Finché le patate sono calde, schiacciatele nello schiacciapatate e mettetele in una terrina. Aggiungete la farina setacciata, l’uovo e il sale, e lavorate tutto con le mani fino a ottenere un impasto sodo che non si attacchi alle mani.  Dividete l'impasto in tanti pezzetti che modellerete in forma di rotolini dello spessore di un dito (circa 2 cm).  Spolverizzate il piano di lavoro  (io ci metto sopra una tovaglia) di farina, passatevi i rotolini, quindi tagliateli a tocchetti lunghi 2-3 cm e se viva, decorateli spingendoli con il pollice sui rebbi di una forchetta. Metteteli su un vassoio.

4)Mettete a bollire una pentola d’acqua. Nel frattempo tagliate lo speck a pezzettini o a striscioline in una padella rosolate senza condimenti. Mettete da parte. Aggiungete un filo di olio nella padella e il formaggio tagliato a tocchetti. Fatelo sciogliere tenendo il fuoco basso, e aggiungendo 2-3 cucchiai di latte per rendere il composto cremoso, e spegnete il fuoco.

5) Quando l’acqua bolle, aggiungete poco per volta gli gnocchi. Quando verranno a galla saranno pronti. Metteteli  man mano nella padella, aggiungete lo speck, accendete il fuoco per qualche minuto e lasciate insaporire il tutto. Servite.

Answer (typical of those who cook  well, and a lot, since decades): "Well, enough. I've never weighed the flour, I always decide at the moment. " Oh yeah, that's because I never remember how much flour I have  to use and each time this phone calling is the same . I am applying on the gnocchi  , because I really like them, and they make so Home and Sunday .. Of course this is not a light dish, but if you do not overdo the amount of cheese, is a good dish without exaggeration. I'll try to give doses of flour after weighing my "eye", when in fact the compound is evaluated by touching it and looking at him. Of course vital is the type of potato used, possibly to be powdery (so they don’t release too much water).


INGREDIENTS
- 2 medium potatoes per person (about 1.2 kg in total if consider the classical 4 people dose)
- 300g of flour  plus some others for processing
- 1 egg
- 1 pinch of salt
- extravirgin oil
- 1 package of  Gorgonzola (it’s similar to blue cheese  - choose it mild or hot according to taste)
- 100g of speck (a kind of bacon) in a single slice
- A little milk

1) Put the potatoes in the basket of the pressure cooker and cover the bottom with a glass of cold water. Close the lid, turn the heat to maximum, and at the first whistle calculate  at least 12 minutes. Take the pot vent, open it.

2) If you do not have a pressure cooker, place potatoes in a large pot of cold water, and cook for about 40 minutes.

3) While the potatoes are hot, peel and mash them in the masher and put them in a bowl. Add the sifted flour, the egg and salt, and work everything with your hands until dough is firm it does not stick to your hands. Divide the dough into small pieces and model them in the form of rolls, the thickness of a finger (about 2 cm). Sprinkle the work surface (I usually use on it a table-cloth that I specifically use for this kind of recipes) with flour,  roll  the rolls on it. Cut them into pieces 2-3 cm long, and if u like, decorate them with your thumb pushing them on the tines of a fork. Put them on a tray.


4) Put to boil a pot of water. Meanwhile cut the bacon into small pieces or strips in a pan without condiments until they are browned. Set aside. Add a little oil in the pan and the cheese cut into chunks. Do this by holding the melt over low heat and add 2-3 tablespoons of milk to make a cream, and turn off the heat.

5) When the water boils, add the gnocchi, little by little (not more than 8-10 together). When they come to the surface, they will be ready. Put them gradually into the pan, add the bacon, light the fire and cook for a few minutes the whole. Serve.

PS. Gnocchi can be defined dumplings.. I make them with potatoes, because but there are other kinds with flour, chestnut flour, semolina etc. depending on which region u live.
