SPAGHETTI GOLOSI MA LEGGERI

Giornata lunatica ieri. Umore up e down, un po’ come la temperatura in questi giorni (il mio basilico in terrazza ha ancora i fiori, una cosa mai vista in ottobre – e per intenderci non vivo al sud). E quindi voglia di coccole, anche in cucina. Ed ecco un piatto unico che riesce ad essere goloso ma leggero, da mangiare senza sensi di colpa per un pranzo veloce,  sempre all’insegna della semplicità.



INGREDIENTI
- 80g di spaghetti a testa
- 2 fettine di speck tirolese a testa
- 1 piccola patata a testa
- 2 cucchiai di ricotta a testa
- sale
- pepe
- olio evo
- rosmarino

1) Mettete a bollire l’acqua per gli spaghetti, salate e metteteli a cuocere per il tempo indicato sulla confezione.

2) Nel frattempo, in una padella senza condimenti date rosolare le fettine di speck. Tagliatele a striscioline e mettetele da parte.

3)Nella stessa padella mettete un filo di olio. Scaldatelo, e mettete a rosolare le patate tagliate a piccoli tocchetti. Cospargetele con il rosmarino e lasciatele cuocere.

4) Frullate la ricotta con un po’ di pepe, un filo di olio e un po’ di acqua di cottura della pasta – quel tanto che basta per rendere  il composto morbido, una salsina.

5) Scolate la pasta e mettetela nella padella con le patate, unite la crema di ricotta e cospargete con le striscioline di speck. 






TASTY BUT LIGHT SPAGHETTI
Yesterday I had the blues.  Mood up and down, as the temperature outside in these days. Here it’s going down a really strange autumn (the basil on the terrace still has the flowers – and it’s October! I can assure u that in the north of Italy it’s a strange situation).  So I needed  cuddles , even in the kitchen.  And here's a dish that manages to be tasty but light. You can eat it without guilt for a quick lunch, always characterized by simplicity.


INGREDIENTS
- 80g of spaghetti per person
- 2 slices of bacon (I used the Tyrolean one)  per person
- 1 small potato per person
- 2 tablespoons ricotta cheese per person
- salt
- pepper
- extra virgin oil
- rosemary

1) Put water  to boil for the spaghetti, salted  it and put the spaghetti  to cook for the time indicated on the packaging. The right recipe is 10g of coarse sea salt every 1l of water, and u have to use this proportion for every 100g of pasta.  U have to wait the water boils before using the salt and put the pasta into the pot.

2) Meanwhile, in a pan without condiments dates to brown the slices of bacon. Cut  them into strips and set them aside.

3) In the same pan put a little oil. Warm it, and fry the potatoes cut into small pieces. Sprinkle with the rosemary and cook.

4) Whisk the ricotta with a little 'pepper, a little oil and a little' of the pasta cooking water - just enough to make the mixture soft like a sauce (I often use ricotta as a substitute of cream etcetera, because it is really versatile and it has maximum 146 calories per 100g of product ).

5) Drain the pasta and place it the pan with the potatoes, add the cream cheese and sprinkle with the  strips of bacon.
