SPEZZATINO SPEZIATO BROCCOLI E OLIVE

Ok ok.. le foto non sono un granché (era già assolutamente buio in quel momento), ma mi va di proporre questo piatto comunque, perché è un piatto unico buono, veloce e sano. Insomma, si lascia mangiare volentieri . Con il freddo lo spezzatino è un piatto che si può fare in mille modi e poco tempo (soprattutto con la mia amata pentola a pressione).  



INGREDIENTI
- 800g di lonza di maiale (ma vanno bene anche altri tagli, come la spalla per esempio)
- 1 cipolla tagliata ad anelli sottili
- 1 carota tagliata a cubetti
- 1 gambo di sedano tagliato a cubetti
- olio evo
- olive verdi a piacere
- 1 broccolo
- 1 dado di verdura
- 1 bicchiere di vino bianco secco
- 1 bicchiere d’acqua (circa 1 mestolo)
- 1 cucchiaino di curcuma

1) Tagliate la carne a cubetti. Mettete un filo di olio, la carota, la cipolla e il sedano nella pentola. Fate soffriggere il tutto, poi aggiungete la carne poco per volta e fatela rosolare, bagnando anche con il vino e facendolo evaporare.

2) Aggiungete il bicchiere di acqua, il dado, la curcuma. Chiudete il coperchio e alzate la fiamma . Al primo sibilo forte, abbassate la fiamma al minimo e calcolate 20 minuti. Al termine fate sfiatare la pentola e aprite il coperchio.  

3)Aggiungete le olive, mescolate con un mestolo di legno e richiudete la pentola. Fate andare il tutto per altri 5 minuti. Nel mentre che si cuoce la carne, mettete a bollire poca acqua salata in cui metterete le cime di broccolo per 2-3 minuti. Poi mettetele in una bacinella di acqua ghiacciata (così resteranno croccanti) e mettetele da parte.

4) Quando sarà il momento di aprire la pentola a pressione (dopo quindi aver fatto cuocere anche le olive), aggiungete le cime di broccolo e fate insaporire per cinque minuti tutto insieme.  Servite.

5) Se non avete la pentola a pressione, preparate un brodo più lungo ( circa 1/2 litro). Mettetene un paio di mestoli e iniziate a fare cuocere la carne a fuoco bassissimo in una casseruola, mescolando, per 40 minuti. Aggiungete del brodo se necessario. Aggiungete le olive e fate cuocere per altri 15 minuti. Aggiungete l cime di broccolo come al punto 4.

6) Avendo preparato con un po’ di anticipo la carne, io ho tenuto il fondo di cottura  un po’ più liquido. Ho messo la carne nella wok, e all’ultimo ho aggiunto i broccoli e ho fatto scaldare il tutto lasciando restringere il fondo di cottura. In questo modo lo spezzatino si mantiene più morbido, dato che uno dei problemi della carne di maiale è che può risultare secca. Se avete questa sensazione, potete aggiungere un po’ di burro (un pezzettino)  o yogurt  bianco non zuccherato (qualche cucchiaio), per dare una nota più cremosa.



STEW  WITH BROCCOLI AND OLIVE
Ok ok .. the pictures are not that great (it was already quite dark at that time), but I want to propose  this recipe however, because it is a good single dish, fast and healthy. With the cold season the stew is a dish that can be done in a lot of ways and little time (especially with my beloved pressure cooker).

INGREDIENTS
- 800g loin of pork (but go it’s ok with other pieces too, such as the shoulder)
- 1 onion, cut in thin rings
- 1 carrot, diced
- 1 stalk celery, diced
- extra virgin oil
- green olives to taste
- 1 broccoli
- 1 nut for vegetable broth
- 1 glass of dry white wine
- 1 glass of water (about 1 ladle)
- 1 teaspoon of turmeric

1) Cut the meat into cubes. Put a little oil, the carrot, onion and celery in the pot. Fry the whole, then add the meat and brown it little at a time, bathing it with the wine and letting it evaporate.

2) Add the glass of water, the nut, the turmeric. Close the lid and turn up the flame. At the first loud whistle, lower the heat and calculate 20 minutes. At the end, let the pot vent and open lid.

3) Add the olives, stir with a wooden spoon and close the pot again. Let it cook for other 5 minutes. During all this time, prepare a little salted water to boil and  put the tops of broccoli inside for 2-3 minutes. Then put them in a bowl of ice water (in this way they  will remain crunchy) and set aside.

4) When it is time to open the pressure cooker (after having cooked  the olives too), add the tops of broccoli and mix all together for five minutes. Serve.

5) If you do not have a pressure cooker, prepare a more broth (about 1 / 2 liter). After having browned the meat, put a couple of ladles of broth in the pot.  Cook the meat in a saucepan over low heat, stirring, for 40 minutes. Add some broth if necessary. Add olives and cook for other 15 minutes. Add the broccoli tops as in step 4.

6) Having prepared the meat some time before dinner, I kept the sauce a little' more liquid. I put the meat in a wok. Immediately before dinner I heated the dish, letting the sauce to restrict, and only on that moment I added the broccoli. In this way the stew remains softer  - because one of the problems of  the pork is that it can be a bit dry. If you have this feeling, you can add a little 'butter (one little piece) or unsweetened plain yogurt (a few tablespoons) to give a more creamy note.
