SPIEDINI DEL GIORNO DOPO

L’ho già detto che odio buttare via il cibo vero?.. Beh dopo la serata con lo spezzatino sono  avanzate alcune fettine di polenta e delle zucchine grigliate. Ho guardato cosa c’era in frigo e ho proposto un antipasto facilissimo ma che si è rivelato gustoso, sfizioso e colorato …. Cosa c’è di meglio?



INGREDIENTI
- fettine di polenta
- fettine di zucchine grigliate
- alcune fettine di speck o prosciutto crudo
- verdure miste per soffritto (sedano, cipolla, carota)
- ½ barattolo di salsa di pomodoro (circa 200-250g)
- olio evo
- erbe aromatiche a piacere (basilico, rosmarino, timo)
- un pezzettino di burro (facoltativo - 1/2 cucchiaino)

1) Mettete un filo di olio in una padella, fatelo scaldare e fate soffriggere a fuoco basso le verdure. Aggiungete la salsa di pomodoro e le erbe aromatiche a piacere. Se la salsa è acida, aggiungete ¼ di cucchiaino di zucchero. Lasciate cuocere a fuoco lento per circa 10 minuti. A fine cottura mantecate con un pezzettino di burro.

2) Mettete a scaldare un’altra padella senza condimento. Tagliate le fettine di polenta a cubotti, e tagliateli a metà. Create una torretta composta da uno strato di polenta, una fettina di speck o prosciutto crudo, un altro strato di polenta  e una zucchina grigliata. Infilzate le torrette con dei piccoli spiedini di legno, e mettetele nella padella. Coprite con coperchio e lasciate scaldare a fuoco basso per circa 10 minuti o finché si forma una crosticina sotto la polenta.

3)Mettete la salsa come base su un piatto unico o su dei piattini individuali, e mettete gli spiedini sulla salsa. Servite.

PS: Questa tipologia di antipasto può già rientrare nella categoria degli "spuncioti" (stuzzichini).. Infatti l'antipasto così concepito ha viaggiato nel Mediterraneo grazie alle navi,  dalla Turchia (dove ci sono i meze, piccoli antipasti nati dall'esigenza dei vari principi di far assaggiare il proprio cibo a un servo che verificasse che non ci fosse del veleno - alla faccia del brutto lavoro!), fino alla Spagna e alle sue famosissime tapas, passando però per Venezia... E infatti se vi capita di passare per i bacari (bar) veneziani e in generale veneti, potete trovare mille versioni degli spuncioti, e spesso a base di polenta.






THE DAY AFTER SKEWERS
I've already said I hate throwing food away .. Well, after the stew evening ,a few slices of polenta and grilled zucchini were leftover. I looked at what was in the fridge,  and I invented a really  easy appetizer but that turned out to be tasty and colorful .... What could be better?

INGREDIENTS
- Slices of polenta
- Slices of grilled zucchini
- A few slices of bacon  or ham (crudo di parma)
- a  bunch of  mixed vegetables (celery, onion, carrot chopped)
- ½ can of tomato sauce (about 200-250g)
- Extra virgin oil
- Herbs to taste (basil, rosemary, thyme)
- A small piece of butter (optional - 1 / 2 teaspoon)

1) Put a little oil in a pan, let it heat and fry the vegetables over low heat. Add the tomato sauce and herbs to taste. If the sauce is acidic, add ¼ teaspoon of sugar. Let it simmer for about 10 minutes. When cooked, stir in a bit of butter.

2) Place another pan to heat without seasoning. Cut the slices of polenta in cubes, and cut in half. Create a tower composed of a layer of polenta, a slice of bacon or ham, another layer of polenta and grilled zucchini. Create the towers with small wooden skewers, and place them in the pan. Cover with a lid and let it warm over low heat for about 10 minutes or until crust is formed under the polenta.

3) Put the sauce as a base on a  dish or on individual dishes, and place the skewers on sauce. Serve.

 PS: This type of starter can already fall into the category of  the so called "spuncioti" (appetizers) .. In fact the starter so conceived has traveled via ship in the Mediterranean, from Turkey (where there are the mezes, small appetizers born from the need of the various princes to make taste their food to a servant that occurred that there wasn't poison - what a bad job!), to Spain and its famous tapas, and going to Venice ... And in fact if you happen to go to "bacari" (the typical wine bars) in Venice and in Veneto, you can find several versions of spuncioti, and often based on polenta.
