STINCO DI MAIALE VELOCE CON SPICCHI DI PATATE AROMATICHE

Piatto invernale per eccellenza, lo stinco è perfetto per i nostri giovedì sera, e per celebrare una giornata un po’ particolare. E’ possibile farlo senza troppi grassi, grazie alla pentola a pressione.. Uno dei grandi vantaggi di tale pentola infatti è che si possono ridurre i condimenti in modo notevole. Lo svantaggio invece è che la pentola stufa ma non rosola, quindi nel caso dello stinco almeno per l’ultima parte della  cottura preferisco che stia una mezz’ora in forno.. Il risultato è comunque la riduzione dei tempi, in un’ora è pronto..



INGREDIENTI
- 1 stinco di maiale ogni 2-3 persone
- olio evo
- 1 carota, 1 costa di sedano tagliati a tocchetti
- 1 cipolla rossa tagliata ad anelli sottili
- ½ bicchiere di vino rosso (io avevo del Raboso)
- 1 bicchiere d’acqua
- sale
- qualche bacca di ginepro
- 3 chiodi di garofano
-  1 cucchiaino di semi di finocchio
- un cucchiaino di burro
- 1 foglia di alloro (fac)

1) Sciacquate lo stinco, e infilate dove possibile i chiodi garofano. Nella pentola mettete un po’ d’olio, l verdure e le spezie. Fate rosolare a fuoco basso, in modo tale che le cipolle si ammorbidiscano e si sprigionino gli aromi. Mettete lo stinco nella pentola e fatelo rosolare su ogni lato, girandolo con due mestoli di legno (non con una forchetta, è importante non pungerlo).

2) Aggiungete il vino, l’acqua e il sale, e chiudete il coperchio. Alzate il fuoco, e quando si sentirà il primo sibilo alto della pentola, abbassate il fuoco e contate 30 minuti.  Intanto preriscaldate il forno a 180°.

3) Al termine, fate sfiatare la pentola, aprite il coperchio e trasferite lo stinco con tutto il suo sugo (dovrebbe essere ancora liquido) in una pirofila da forno, infornate per 20-30 minuti, aggiungendo se vi piace l'alloro. Tiratelo fuori quando si sarà ben colorato e il sugo ristretto. Aggiungete il burro per mantecare, e servite (nel mio caso, con patate e polenta taragna).




PORK KNUCKLE
Winter dish by definition, the pork knuckle is perfect for our Thursday night and to celebrate a special day . It  can be done without too much fat, thanks to the pressure cooker .. One big advantage of this cooker is that the pot can significantly reduce the seasonings. While the disadvantage is that the pot stove but not brown, so at least for the last part of cooking is that I prefer transfer the knuckle for  half an hour in the oven . The result is that the dish in ready in an hour.

INGREDIENTS
- 1 porkknuckle every 2-3 persons
- extra virgin oil
- 1 carrot and  1 rib of celery cut into chunks
- 1 red onion cut into thin rings
- ½ cup of red wine (I used Raboso, a  full-bodied wine which is produced especially in  Veneto)
- 1 glass of water
- salt
- a few juniper berries
- 3 cloves
- 1 teaspoon fennel seeds
- A teaspoon of butter
- 1 bay leaf (optional)

1) Rinse the  knuckle ,and where possible  stuck the cloves. In the pot you put a little 'oil, the vegetables and spices. Sauté over low heat, so that the onions soften and the mix starts radiating aromas. Put the knuckle in the pan and brown on each side, turning with two wooden spoons (not with a fork, it is important not sting the meat).

2) Add the wine, water and salt, and close the lid. Turn up the fire, and when you hear the first loud whistle of the pot, lower the heat and count 30 minutes. Meanwhile, preheat the oven to 180 degrees.

3) At the end,  bleed the pot, open the lid and transfer  the knuckle with all its sauce (it should still be liquid) in an oven-proof dish, and bake for 20-30 minutes. Pull it out when it will be very colorful and the sauce is restricted. Add the butter to thicken, and serve (in my case, with potatoes and polenta taragna – http://en.wikipedia.org/wiki/Polenta).
