TORTA DI MELE LIGHT

Non so se è così per tutti, ma per me la torta di mele è davvero la migliore. Fa troppo infanzia, casa, profumo di dolce in forno, inverno, mamma, merenda.. E’ oltretutto nella top five  anche di Lui , quindi è sempre un piacere semplice che ci si può concedere. Questa torta poi è la classica ricetta declinata in versione  leggera, quindi bando ai sensi di colpa! (mi chiedo sempre: quante  varianti di torta di mele possono esistere? E’ un dolce presente in tantissimi Paesi oltretutto)



INGREDIENTI
- 3-4 mele (dipende dalle dimensioni e dalla varietà: di solito uso le mitiche renette, golden, o annurca)
- 125g di farina
- 2 uova
- 70g di burro + quello per la tortiera
- 100g di zucchero semolato
- qualche cucchiaio di zucchero di canna
- 1 bustina di lievito
- qualche cucchiaio di latte
- 1 cucchiaino di cannella
- il succo di mezzo limone
- aroma alle mandorle

1) Sbucciate due mele, tagliatele a spicchietti sottili e metteteli a macerare con il succo del limone e la cannella. Sul fondo di una tortiera mettete della carta forno bagnata e strizzata, e imburrate bene dappertutto. Cospargete con qualche cucchiaio di zucchero di canna (si formerà una buona crosticina in cottura).

2) Separate i tuorli dagli albumi e montate questi ultimi a neve. In un’altra terrina montate il burro morbido con lo zucchero. Aggiungete i tuorli (uno allo volta, alternandoli con un po’ di farina) e la farina setacciata, il lievito, l’aroma alle mandorle.

3) Sbucciate le altre mele, tagliatele a tocchetti e mettetele nell’impasto, verificando la consistenza e aggiungendo eventualmente qualche cucchiaio di latte. Aggiungete il fondo di macerazione delle mele.

4) Preriscaldate il forno a 180°. Mettete sul fondo della torta metà delle mele macerate. Versate il composto, stendetelo bene  e concludete con le altre mele macerate. Infornate 40 minuti.




LIGHT APPLE CAKE
I do not know if this is so for everyone, but for me the apple pie is really the best. It recalls childhood, home, the scent of fresh-baked, winter, mom, snack after school .. Plus  it’s in the top five of my He, so it is always a simple pleasure that can be granted. This cake recipe starts from the classic one,  declined in a light version, so it’s a double pleasure to eat it! (I always wonder: how many variations of apple pie may exist? It 'a sweet present in so many countries)

INGREDIENTS
- 3-4 apples (depending on the size and variety, usually use the mythical Renette, Golden, or Annurca ones)
- 125g of flour
- 2 eggs
- 70g of butter plus some for the cake mold
- 100g caster sugar
- a few tablespoons of  brown sugar
- 1 packet of yeast
- a few tablespoons of milk
- 1 teaspoon cinnamon
- juice of half a lemon
- almond flavor

1) Peel two apples, cut into thin cloves and put them to macerate with the juice of the lemon and cinnamon. On the bottom of a baking pan put wet  and squeezed greaseproof paper, and spread it all over with butter. Sprinkle inside with some  tablespoon of brown sugar (it will form a good crust while cooking).

2) Separate the yolks from the whites and whip them to stiff peaks. In another bowl, mounted the soft butter with sugar. Add the egg yolks (one at a time, alternating with a little of flour) and the sifted flour, baking powder, almond flavor.

3) Peel the other apples, cut into chunks and put them in the dough, ensuring consistency and possibly add a few tablespoons of milk. Add the bottom of maceration of apples.

4) Preheat the oven to 180 degrees. Put on the bottom of the cake mold half of apples macerated. Pour theduough, roll it out and finish with other apples macerated. Bake 40 minutes.
