GRANO RICCO CON FINOCCHI E ZUCCA


E dopo essere stata tormentata dal dentista, eccomi di nuovo.. Qui la nebbia persevera e inizia ad essere freddo, perciò ne approfitto per cercare piatti colorati contro la malinconia. Utilizzo molto i cerali, che sono una valida alternativa al riso nel gusto e nelle vitamine.. e siccome sono sempre di fretta, cosa c’è di meglio dei fantastici cereali che si cuociono in 15 minuti?



INGREDIENTI
- 80 g di grano a persona
- 1 piccolo finocchio ogni 2 persone
- 70 g di zucca a persona (50 g da cuocere con il grano, 20 g per decorare)
- olio evo
- mezza piccola cipolla gialla finemente affettata
- 1/2 cubo di brodo di dado ogni 2 persone
- grana padano, parmigiano reggiano o pecorino grattugiato (fac.)

1) Lavate e pulite il finocchio, eliminate la base e affettate finemente il cuore. Pulite la parte di zucca da mettere nel grano e tagliatela a tocchetti. La restante zucca va tagliata a striscioline. Nella pentola a pressione aperta mettete 3 cucchiai di olio e la cipolla, e fate soffriggere a fuoco basso. Aggiungete il grano, la zucca e il finocchio e fate tostare tutto per un paio di minuti.

2) Versate acqua seguendo le seguenti proporzioni:
- 1 : 2 (ossia 100g di riso, 200ml di acqua) se volete un risultato più morbido
- 3 : 5 (ossia, in modo facile: quantità di riso moltiplicata per  5 e diviso per 3) se volete un risultato  un po’ più compatto .
Aggiungete il dado, chiudete il coperchio, alzate  il fuoco al massimo, e al primo sibilo riducetelo al minimo e calcolate 5-6 minuti. Lasciate sfiatare la pentola, aprite il coperchio.

3) Nel frattempo ungete una pirofila con le striscioline di zucca. Mettetele nel forno a microonde alla massima potenza con grill, e fate cuocere per il tempo di cottura del grano, finché la zucca diventa croccante.  Se volete un risultato più sfizioso, infarinate le striscioline e friggetele in olio bollente.

4) Servite il grano, aggiungete le striscioline di zucca, cospargete con poco origani finemente tritato e il formaggio se vi piace.

5) Preparazione tradizionale: In una pentola fate scaldare 1l di acqua fino al bollore, e crete il brodo con il dado. Mettete un giro di olio in una pentola e fate soffriggere la cipolla. Aggiungete il grano, la zucca e il finocchio e fate tostare tutto per un paio di minuti. Unite 4-5 mestoli di brodo bollente e contate i minuti di cottura del tipo di grano che state usando (circa 12 minuti).
Continuate unendo il brodo man mano che viene assorbito, mescolando senza lasciare che il composto si asciughi troppo (soprattutto non deve attaccarsi al fondo della pentola). Servite.




RICH WHEAT WITH PUMPKIN AND  FENNEL
And after being tormented by the dentist, I'm back .. Here the fog persists and the weather begins to be cold, so I take this opportunity to try colored dishes against melancholy. I use a lot of the cereals, which are a great alternative to rice in taste and vitamins .. and because I’m always in a hurry, what's better than the fantastic cereals that cook in 15 minutes?

INGREDIENTS
- 80 g of wheat per person
- 1 small fennel every 2 persons
- 70 g of pumpkin per person (50 to put in the wheat, 20 for decoration)
- Extra virgin oil
- Half small yellow onion, finely sliced
- 1 / 2 cube bouillon cube for every 2 persons
- grated grana padano,  parmesan or pecorino cheese (Fac)

1) Wash and clean the fennel, remove the base and finely slice the heart. Clean a part of pumpkin and cut into chunks. The remaining pumpkin is cut into strips to decorate.  In the pressure cooker put 3 tablespoons of oil and the onion and fry over low heat. Add the wheat, pumpkin and fennel, and toast all for a couple of minutes.

2) Pour water according to the following proportions:
- 1: 2 (ie 100g of rice, 200 ml of water) if you want a softer result
- 3: 5 (ie, the easy way: the amount of rice multiplied by 5 and divided by 3) if you want a result a little more compact.
Add the bouillon cube, close the lid, turn up the heat to maximum, and at the first loud whistle lower  the fire to the minimum and calculate 5-6 minutes. Let the pot vent, then open the lid.

3) Meanwhile, grease a baking dish with the thin slices of pumpkin. Put them in the microwave at full power with grill, and cook for a cooking time of grain, until the squash is crisp. If you want a more delicious result, bread the strips in the flour  and fry in hot oil.

4) Serve the wheat, add the pumkin slices, sprinkle with a little finely chopped oregano and cheese if you like.

5) Traditional preparation: In a saucepan heat 1 liter of water to the boil,  and make the broth with the bouillon cube. Put 3 spoons of oil in a pan and fry the onion. Add the wheat, pumpkin and fennel, and toast all for a couple of minutes. Add 4-5 ladles of hot broth and count the minutes of cooking of the wheat you are using (about 12 minutes).
Continue joining the broth as it is absorbed, stirring without letting the mixture is too dry (especially it should not stick to the bottom of the pot). Serve.
