TAGLIATELLE AUTUNNALI ZUCCA E FUNGHI


Scrivo di fretta in giorni impegnativi.. e di fretta penso a soluzioni sane per pranzi e cene. Questa ricetta è un  omaggio all’autunno, ai suoi colori e sapori, per contrastare la nebbia che si è presentata puntualissima con l’inizio di novembre.



INGREDIENTI
- 250g di tagliatelle
- 500g di zucca
- 250g di funghi surgelati
- olio evo
- sale
- rosmarino
-1/4 di dado di verdura
- 1 cucchiaino di burro

1) Mettete nel cestello della pentola a pressione la zucca. Sul fondo della pentola mettete ½ bicchiere d’acqua. Chiudete il cestello, alzate la fiamma e al primo sibilo alto abbassate la fiamma al minimo. Calcolate 4 minuti, lasciate sfiatare la pentola e aprite il coperchio.

2) Nel frattempo mettete a bollire una pentola con abbondante acqua. Tagliate la zucca a dadini. In una padella mettete un filo di olio e il rosmarino, il pezzettino di dado e fate soffriggere a fuoco basso. Aggiungete i dadini di zucca e fate cuocere per circa 10 minuti.

3) Quando l’acqua bolle, salatela, e gettate le tagliatelle. Fate mantenere il bollore, e dopo un paio di minuti aggiungete i funghi surgelati. Fate cuocere tutto assieme rispettando le istruzioni di cottura delle tagliatelle (in genere sui 7 minuti). Un minuto prima del termine, scolate la pasta e i funghi, e mettete tutto in padella ad insaporirsi con la zucca per un minuto, a fuoco medio e mescolando. Aggiungete il burro, ed eventualmente un cucchiaio di panna se volete legare maggiormente. Servite.




AUTUMN TAGLIATELLE WITH PUMKIN AND MUSHROOMS
I write in a hurry in these busy days .. I think about fast and healthy solutions for  lunches and dinners. This recipe is a tribute to autumn, with its colors and flavors, to counteract  the fog that  punctually  submitted at the beginning of November.

INGREDIENTS
- 250g of tagliatelle
- 500g of pumpkin
- 250g of frozen mushrooms
- extra virgin oil
- salt
- rosemary
-1 / 4  of bouillon vegetables cube
- 1 teaspoon of butter

1) Put the pumpkin in the pressure cooker basket. At the bottom of the pan put ½ cup of water. Close the lid, turn up the heat and the first loud whistle lower the heat  to a minimum. Calculate 4 minutes, leave the pot vent and open the lid.

2) Meanwhile put a pot with abundant water and make it boil. Cut the pumpkin into cubes. In a pan put a little olive oil and rosemary, a bit of nut and fry over low heat. Add the diced pumpkin and cook for about 10 minutes.

3) When the water boils, salt it, and throw the tagliatelle. Do keep the boil, and after a couple of minutes add the frozen mushrooms. Cook all together according to the tagliatelle cooking instructions (usually about 7 minutes). One minute before the deadline, drain the pasta and mushrooms, and put everything in the pan to flavor with the pumpkin for a minute over medium heat, stirring. Add the butter, and possibly a tablespoon of cream. Serve.
