PIZZOCCHERI IN VERSIONE LIGHT

Ok, sembra un po' una sfida non realizzabile.. ed in effetti, questo piatto non si può definire light in ogni caso. Ma si possono abbattere un po' di calorie, per gustare comunque un formato di pasta di cui la Valtellina è giustamente orgogliosa..



INGREDIENTI per 4 persone
- 320g di pizzoccheri
- 300g di erbette miste (spinaci, biete, cicoria)
- 2 patate medie
- 150g di stracchino allo yogurt
- 1 cucchiaio di burro
- 3 cucchiai di grana padano grattugiato
- 4 foglie di salvia

1) Pelate e tagliate le patate a tocchetti. Fate bollire dell'acqua, salatela, e gettate i pizzoccheri. Fateli cuocere per il tempo indicato sulla confezione (in genere 11-13 minuti). 6 minuti prima delle fine del tempo di cottura, mettete a cuocere le patate tagliate a tocchetti, e 3 minuti prima della fine del tempo di cottura mettete a cuocere nella stessa pentola anche le erbette. Scolate tutto.

2) Tagliate il formaggio a tocchetti . In una padella capiente fate sciogliere il burro, insaporitelo con la salvia e se vi piace con uno spicchio di aglio, che leverete però subito. Aggiungete metà dello stracchino, e fatelo ammorbidire. Versate i pizzoccheri, le patate  e le erbette, mescolate facendo insaporire a fuoco basso.

3) Aggiungete lo stracchino restante, mescolate ancora. Mettete nei piatti, cospargete con il grana grattugiato e se vi piace un po' di pepe. Servite.




PIZZOCCHERI LIGHT VERSION

Ok, it seems a bit of a challenge not feasible ... and in fact, this dish can not define light anyway. But you can break down some calories, for a pasta shape for which Valtellina is justifiably proud.

Ingredients for 4 persons
- 320 g  pizzoccheri
- 300 g mixed spinach, silverbeet, chicory
- 2 potatoes
- 150 g of  stracchino (I found the light version, with  yogurt inside.. the right cheese should be the Valtellina Casera  and Fontina)
- 1 tablespoon of butter
- 3 tbsp grated grana padano
- 4 Sage leaves

1) Clean the potatoes and peel them. Cut them in little pieces. Boil some water, add salt, and thrown inside the pizzoccheri. Cook for the time indicated on the package (usually 11-13 minutes). 6 minute  before the end of cooking time, throw insiede the potatoes chopped, 3 minutes before the end of cooking time put to cook in the same pan  the mixed  herbs. Drain everything well.

2) Cut the cheese into small pieces. In a saucepan melt butter with sage and let it flavour. Add if you like a clove of garlic, which however will be kept away after 1 minute. Add half  cheese, and let it soften. Add the pizzoccheri, the potatoes  and herbs, mix on low heat.

3) Add stracchino remaining, stir again. Put on plates, sprinkle with the grated Parmesan and if you like a little bit of pepper. Serve.
